Glimpse at us.

This week was all kinds of crazy!!! 
Six photo sessions in one week (three of them in one day), wedding preparation, and school wrapping up all total CRAZY CAM.
Yeah, I've been running around constantly and I'm still trying to catch up.
Anyway, in the midst of all the craziness, I still make sure to take time to enjoy life...
Hence the waffles and a little photo session for us.
I was craving Waffle Bliss all week so I looked up a recipe and decided to make my own. I really enjoy cooking and baking but don't always have the time to try new things, so I decided I'd make a little time and try something new. They turned out great, as far as I'm concerned, and I dressed them with peanut butter, crunchy cookie butter, syrup, whip cream, and strawberries (what wouldn't taste great with all those yummy toppings???)
Here's the recipe I followed:

prep time: 4 hours
cook time: 5 minutes
yield: 10 waffles
serving size: 1 waffle
waffle love is an incredibly popular waffle truck in utah and now you can make their famous liege waffles from home!
ingredients
  • 3/4 cup whole milk, scalded and cooled to warm milk
  • 2 tablespoons water, warmed
  • 1 1/2 teaspoons sugar
  • 2 teaspoons instant yeast
  • 2 large eggs, lightly whisked
  • 1 cup unsalted butter, softened
  • 3 tablespoons honey
  • 3 tablespoons white sugar
  • 3 teaspoons vanilla
  • 2 cups bread flour
  • 1 1/2-1 3/4 cups flour
  • 2 cups belgian pearl sugar (we buy ours from orson gygi)
instructions
  1. add the 1 1/2 teaspoons of sugar to the milk and water and add the yeast, stirring to combine. allow the yeast to proof, or get foamy and puffy.
  2. in a large bowl, beat together the butter and sugars. add the eggs, honey and vanilla. stir together and add the yeast mixture. place in a standing mixer with the dough hook and add 2 cups of flour. mix until the dough is thoroughly incorporated, and add the remaining flour, cover with plastic wrap and allow to rest for up to 4 hours on the counter, or up to 24 hours covered with plastic wrap in the fridge. the dough will need to sit on the counter and come back to room temperature to use. then punch down and knead in the pearl sugar. separate into 8 to 10 balls and place on a hot, greased waffle iron. cook until golden brown and serve with biscoff, whipped cream and fresh berries.

need to skimp on the rise time? no biggie, though you will lose some of that awesome flavor.
 Cec has been learning about photography and asked if she could take pictures of us! Of course I said, YES, because I believe you can never have too many pictures.
For her second photo shoot I'd say she did pretty dang good!
 We decided to capture our every day attire and every day life.
 If you know us, you know that I am often found with a plaid shirt around my waist...
 ...and Jeff in his favorite band t-shirts.
Jeff is always singing wherever he goes and plays the guitar any chance he gets. 
 We are always laughing and goofing around.
And we are just straight up goobers! So in capturing all of those things Cec did awesome!!!

Speaking of Cec, we have been wedding crafting (little last minute) all week as well and we are down to 12 DAYS!!! WHAT???? Where does time go???? Anyway, we are having an open house bridal shower that EVERYONE is invited to! We will just be giving her some last minute advise, embarrassing her with some sexy lingerie, and calming some last minute stressors!

Hobo Family.

So yesterday morning I called my mom to tell her that I was coming over that night to teach Syd her cheer try out dance (try outs are next week).
Then I had the genius idea of making "Hobo" dinners and smores. 
(Everyone called me crazy for calling them Hobo dinners, but that's the name, look it up.)
I, of course don't have any of the stuff, so my mom double checked and we were ready to go for that night.
It was such a fun family night, hanging out by the fire, talking, laughing, helping Syd with her cheer stuff, making smores, then watching a movie together.
I seriously LOVE family time! :)

 While waiting I snuggled with Bruzer, our very first dog! He is old now and is really sick, it breaks my heart to see him so weak and skinny. He probably won't be around much longer so be prepared to see pictures and hear my stories. 
 He's doing his gangster face too. I never really thought about having a dog but when we got Bruzer I couldn't believe we didn't have one earlier. I almost killed him as a pup but he instantly forgave me and still carried on full of life, there's just something special about dogs.
 I love him. I tell Jeff we can't get a dog cause the truth is that I get too attached and dread the day of letting them go.

Crock pot cream cheese chicken chili...mmmmmmm :)

I feel like I only share recipes that are EXTREMELY good so enjoy! :)
 Crock Pot Cream Cheese Chicken Chili
(That's a mouthful! A delicious mouthful!!!)

2 chicken breasts, still frozen
1 can Rotel tomatoes
1 can corn kernels, do not drain
1 can black beans, drained and rinsed
1 pkg. Ranch dressing mix
1 T cumin
1 t chili powder
1 t onion powder
1 8-oz pkg. cream cheese
_________
Put the chicken in the crock pot.
Top with the tomatoes, corn,
the drained and rinsed beans,
ranch dressing, cumin, onion and chili powders,
stir to combine then top with the cream cheese.
Cook on low for 6-8 hours, stirring one or twice
 to blend in the cheese.
Shred the chicken into large pieces
and serve over rice.
Can also serve in tortillas or taco shells.
Serves 4

This recipe was soooo easy and extremely delicious! Jeff asked me to make it again this week! :) This is a recipe to put in the rotation!!!

Saturday is a special day...

It's the day we party!!!
(With family!)
We absolutely adore Saturdays, especially with our new schedules. So here's a little recap of our Saturday!
 I wore my new dinosaur necklace that I found at my favorite store, Target for just $2. Inspired by Major and Legend!
 Then we headed over to the hospital rehab to visit my handsome grandpa. We caught my mom there and I had to capture this special moment between them!
 Then we headed to Jeff's parents house so Jeff could watch some football and I could make some jam with my mother-in-law (our new little tradition). She's been making freezer jam forever, and it's delicious, so now I'm trying to learn from her cause I love the jam!
 Our jams! We made strawberry and raspberry jam! We just tried the raspberry this time so I'm really anxious to try it!
 Then Amanda and Emme showed up so we of course had to play! (Photo quality isn't that great cause I only had my phone but the moment is what's important.)

 My fav! :)

Jeff is a little excited for the day he has his own babies, if you can't tell.
We love Saturdays and all the fun we always get to have! :)
Families are forever!!!!!!!!

Friday well spent.

Today was my day off of everything, and if you think I got all the things done that I needed to then you might be dillusional, cause I didn't get anything done that I needed to.
It seems that life just happens how it happens and having a to do list means nothing sometimes.
Haha.
Anyway here are some highlights from my day.
 After dance this morning I passed out then was pleasantly woken up by my sweet husband bringing me breakfast in bed repeating, "rise and shine sleeping beauty" til I woke up.
Seriously, how did I get so lucky???
He even dipped my strawberries in sugar just how I like it.
I love him.
Then he was off to work to later send me day brightener snap chats.
Haha real attractive babe.
Then I wasted my day away doing things that weren't on the "list" including trying this easy enchilada recipe for dinner. Which you can find here!
They were so easy and sooo yummy!!!
 After dinner we were in the dreaming mood so we drove around house shopping then stopped to get a "bloody dew" (we had no idea that was what it was called) and a cookie with extra frosting!
 The night is now being concluded with a serenade session and more house dreaming.
I love Jeff and my life and all the things I've been richly blessed with.
The Lord is good!!!

Better Than "ANYTHING" Cake.

Monday all day I had the yearning for dessert all day! Specifically, Better than "anything" cake! So I texted my mom to know what ingredients we had and what ingredients we needed then as soon as I was off I ran to the grocery store then booked it straight home to start on my masterpiece. I had to have it made before the Bachelorette was on so I could enjoy it while I watched, haha. So I thought I would share this easy recipe since it is delicious!

Better Than "ANYTHING" Cake AKA Better Than "Sex" Cake:


Ingredients:
  • A chocolate cake mix, any kind really, my favorite to use is the triple chocolate cake mix.
  • 1 (14 ounce) can sweetened condensed milk.
  • 1 bottle of Hershey's caramel ice cream topping.
  • 8 ounces whipped topping.
  • 2 Heath candy bars, crushed (Skor bars or Nestle's Heath bits will also work, if you can find them)

Directions: 

  1. Mix cake as directed on package. 

  2. Bake the cake about 30 minutes or until it tests done. 

  3. As soon as it comes out of the oven, poke holes all over it with a fork and pour sweetened condensed milk evenly over the cake, followed by the caramel. 

  4. Refrigerate overnight. (Or if your like me, until you can't wait any longer, still tastes good trust me.) 

  5. Shortly before serving, spread whipped topping over cake and sprinkle with crushed Heath bars.

  6.  Enjoy!

    P.S...I did not see Sean going home at all! BUT that just solidifies that she chooses Jef! :)
